Our only alcoholic base is white rum sourced in Italy. We do not claim that the original distillation happens in Sicily.
Origin and process
It arrives white. Sicily gives it character.
We clearly separate rum origin from later processing: the white base comes from Italy; Old James takes shape in Caltagirone.

At our facility we define sweetness and aroma with Mauritius muscovado sugar and a proprietary spice profile.
3. Cask finish
A final passage through former Red Fox Sicilian Whiskey casks connects the liquid to wood and to our distillery story.
