Old James begins with white rum produced in Italy, selected as a clean canvas for its aromatic profile. The following stages take place at our facility in Caltagirone.
Origin and process
It arrives white. Sicily gives it character.
We clearly separate rum origin from later processing: the white base comes from Italy; Old James takes shape in Caltagirone.

2. Muscovado and spices
We add Mauritius muscovado sugar and our own spice recipe to create a smooth, warm and distinctive taste.
3. Time in oak
A final rest in casks previously used for Red Fox Sicilian Whiskey adds new aromatic nuances and connects the two brands from our distillery.
